Today, I decided to cheer my man up (from work stress) with some of his favourite comfort food : Corned beef Sandwiches.
.
His mom tried one and said "This is good. Eleen has mastered the art of preparing corned beef the way I do it for our family."
.

.
I think it’s the BEST compliment I have ever received to-date on my cooking attempts. :)))
.
We’ve searched high and low. Near and far. Yet, have never found anyone else who prepares corned beef the way his mom prepares it.
.
WP blogged abt it a while ago. Read her post here. Girl, I am proud to share with you the *BEST* way to enjoy this scrumptious dish.
.
4 simple ingredients :
- Can of corned beef
- Diced onions (you may leave out this ‘alien’ if you so desire)
- Cut Bird’s Eye Pepper (Cili Padi)
- Dash of Sugar (best trick his mom taught me abt this dish!)
Cooking method :
Heat up a flat pan and throw in the corned beef. Once the oil from the beef oozes out, throw in the diced onions. Stir till fragrant. Add in the cut cili padi and stir occasionally to avoid sticking to pan. Keep the fire low and simmer till the cili padi softens. Lastly, throw in the dash of sugar to neutralise the saltiness. Leave to cool before wrapping in-between bread slices.
.
The end-product should look something like this.

Found another recipe for corned beef sandwiches here.
Will try it but methinks my man will be biased and stay loyal to his mom’s recipe.
.
Who wouldn’t be, eh?
